Potatoes O'Brien: Easy Pan Fried Potatoes Recipe
- ½ Red Onion, Diced
- 1½ Green Bell Peppers, Diced
- 5 Scallions, Diced
- 4 TBSP Olive Oil
- 4 Garlic Cloves, Minced
- 2 LBS Fingerling Potatoes, Chopped
- Salt and Pepper to Taste
- Add 2 TBSP Olive Oil to Skillet, medium-heat.
- Add peppers, onion, scallions and garlic to skillet.
- Cook, stirring occasionally for five minutes or until softened
- Remove vegetables to bowl.
- Add 2 TBSP Olive Oil and Fingerling potatoes to skillet.
- Cook 15 - 20 minutes on medium-high heat stirring occasionally.
- Add vegetables back into skillet, mix to combine with potatoes.
- Cook for five minutes and serve.
