Stuffed Bell Peppers Recipe

Serves: 4
Ingredients
  • 2 Cups Cooked White Long Rice
  • 4 Green Bell Peppers, seeded, cored and tops cut off
  • 3 Cloves Garlic, Chopped
  • 2 Red Bell Peppers, Seeded, Cored, and Sliced
  • 8 OZ white Mushrooms
  • ½ Red Onion
  • 1½ Ground Beef
  • 2 TBSP Olive Oil
  • ½ TSP Dried Parsley
  • 14.5 oz can Diced Tomatoes
Instructions
  1. Preheat stove to 350.
  2. Boil water, add green bell peppers for 4 minutes to soften
  3. In a skillet, add olive oil, chopped red bell pepper & red onion on medium-high & cook for 3 minutes
  4. Add mushrooms, salt & pepper, cook 2 minutes
  5. Add ground beef, garlic, dried parsley salt and pepper, cook 6 minutes or until browned
  6. Add cooked rice & diced tomatoes
  7. Add ¼ inch water to baking dish
  8. Fill the green bell peppers with filling and place in baking dish
  9. Bake at 350 for 30 minutes
  10. Rest 5 to 10 minutes and serve!
