One Pot Chicken Stew Recipe: How To Make Chicken Stew

Ingredients
  • 1 Onion, diced
  • 1.5 cup carrots, chopped
  • 1 cup celery, chopped
  • 3 lbs fingerling potatoes, quartered or halved depending on size
  • 3 lbs chicken, cubed
  • 2 tbsp chicken spice blend
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp minced garlic
  • 1.5 cup flour
  • 64 oz chicken stock
  • 3 tbsp corn starch
Instructions
  1. In pot on medium high heat add olive oil, butter, minced garlic, onion and celery
  2. Cook until they soften and onion glazes
  3. While the onion and celery cook, combine flour, 1 TBSP spice blend and chicken in a bowl and mix to thoroughly coat chicken.
  4. Once the onion and celery have softened, add chicken mixture to pot and brown
  5. Add carrots
  6. Add potatoes
  7. Add chicken stock
  8. Add remaining spice blend
  9. Bring to bowl and let simmer for 2 or more hours
  10. To thicken the stew, add cornstarch and stir to combine then serve.
