One Pot Chicken Stew Recipe: How To Make Chicken Stew

- 1 Onion, diced
- 1.5 cup carrots, chopped
- 1 cup celery, chopped
- 3 lbs fingerling potatoes, quartered or halved depending on size
- 3 lbs chicken, cubed
- 2 tbsp chicken spice blend
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp minced garlic
- 1.5 cup flour
- 64 oz chicken stock
- 3 tbsp corn starch
- In pot on medium high heat add olive oil, butter, minced garlic, onion and celery
- Cook until they soften and onion glazes
- While the onion and celery cook, combine flour, 1 TBSP spice blend and chicken in a bowl and mix to thoroughly coat chicken.
- Once the onion and celery have softened, add chicken mixture to pot and brown
- Add carrots
- Add potatoes
- Add chicken stock
- Add remaining spice blend
- Bring to bowl and let simmer for 2 or more hours
- To thicken the stew, add cornstarch and stir to combine then serve.
