Frito Pie Casserole Recipe

Serves: 6-8
Ingredients
  • Dash of Kosher Salt
  • Dash of Black Pepper
  • 3 TBSP Olive Oil
  • 10 OZ Cooked Corn
  • 1 Green Bell Pepper, Chopped
  • 1 Yellow Onion, Chopped
  • 2 TBSP Lime Juice
  • 1 TSP Cayenne Pepper
  • 1 TSP Cumin
  • 16 OZ Tomatillo Salsa Verde
  • 14 OZ Bag of Fritos
  • 8 OZ Mild Cheddar and Monterey Jack Blend shredded cheese
  • 1 LB Sausage
  • 1 LB Ground Beef
Instructions
  1. Preheat oven to 350
  2. Add Kosher Salt, Black Pepper, Olive Oil & Cooked Corn to skillet and cook over medium low for 4.5 minutes
  3. Add onion and pepper, cook for 4 - 5 minutes
  4. Remove vegetables and add meat to skillet
  5. Cook meat until browned
  6. Remove and strain meat
  7. Add vegetables back
  8. Add 2 TBSP Lime Juice
  9. TSP Cayenne Pepper
  10. TSP Cumin
  11. OZ Tomatillo Salsa Verde
  12. Cook 2.5 minutes
  13. Add meat and mix
  14. Add 7 OZ fritos to skillet
  15. Cover with shredded cheese
  16. Bake 3 - 5 minutes
  17. Serve with additional Fritos and cheese as desired
