Vegetarian Collard Greens Recipe

Serves: 6-8
Ingredients
  • 1 TBSP Olive Oil
  • 1 TBSP Butter, Unsalted
  • ¾ Yellow Onion, Chopped
  • 1 TBSP Minced Garlic
  • 1 TSP Pepper Flakes
  • 2 LBS Collard Greens, washed and chopped
  • 4 Cups Vegetable Stock
  • Pinch of Kosher Salt and Black Pepper
  • 29 OZ Canned Diced Tomatoes
Instructions
  1. Turn stove on to medium high heat
  2. Add oil and butter to pot
  3. Add onion, cook 2-3 minutes
  4. Add garlic and pepper flakes
  5. Cook 1 minute
  6. Add greens
  7. Add vegetable stock
  8. Add Kosher Salt and Black Pepper
  9. Bring to simmer over high heat
  10. Cover and cook 30 minutes
  11. Add Tomatoes and cook 10 more minutes
  12. Serve with your favorite meat, cornbread, or eat as main meal
