Easy Slow Cooker Chicken and Vegetables
Total time
- 2 LBS Chicken Breasts
- 1 Head Broccoli, cut into florets
- 2 Green Bell Peppers, Sliced
- 2 Red Bell Peppers, Sliced
- 1 Yellow Onion, Sliced
- 28 OZ Crushed Tomatoes
- 8 OZ Tomato Sauce
- 1 TBSP Ground Black Pepper
- 1 TBSP Kosher Salt
- 1 TBSP Oregano, Dried
- 1 TBSP Basil, Dried
- 2 TBSP Minced Garlic
- Put ½ Bell peppers on bottom of slow cooker
- Add ½ onion next
- Season chicken breasts, both sides, with salt and pepper to taste
- Place breasts on top of pepper and onions
- Add Basil and Oregano and Garlic
- Add remaining bell peppers and onion
- Add broccoli
- Add crushed tomatoes and tomato sauce
- Cook 4 hours on high or 8 hours on low
- Shred chicken
- Serve over pasta or rice
