Easy Slow Cooker Chicken and Vegetables

Ingredients
  • 2 LBS Chicken Breasts
  • 1 Head Broccoli, cut into florets
  • 2 Green Bell Peppers, Sliced
  • 2 Red Bell Peppers, Sliced
  • 1 Yellow Onion, Sliced
  • 28 OZ Crushed Tomatoes
  • 8 OZ Tomato Sauce
  • 1 TBSP Ground Black Pepper
  • 1 TBSP Kosher Salt
  • 1 TBSP Oregano, Dried
  • 1 TBSP Basil, Dried
  • 2 TBSP Minced Garlic
Instructions
  1. Put ½ Bell peppers on bottom of slow cooker
  2. Add ½ onion next
  3. Season chicken breasts, both sides, with salt and pepper to taste
  4. Place breasts on top of pepper and onions
  5. Add Basil and Oregano and Garlic
  6. Add remaining bell peppers and onion
  7. Add broccoli
  8. Add crushed tomatoes and tomato sauce
  9. Cook 4 hours on high or 8 hours on low
  10. Shred chicken
  11. Serve over pasta or rice
