Slow Cooker Pot Roast Recipe: Crockpot Chuck Roast

Serves: 6-8
Ingredients
  • 2.1 LBS Chuck Roast
  • 1 Cup Flour
  • 1 TSP Steak Seasoning
  • 2 TSP Kosher Salt
  • 2 TSP Black Pepper
  • 2 TSP Cumin
  • 2 TBSP Olive Oil
  • 1 Medium Onion Chopped
  • 2 TBSP Minced Garlic
  • 1 Cup Tomato Juice
  • 1 Cup Merlot
  • 8 OZ Baby Carrots
  • 8 Redskin Potatoes, Boiled & Rough Cut
  • 1 Cup Beef Stock
  • Dash of Worcestershire Sauce
Instructions
  1. Combine roast, flour, steak seasoning, salt, pepper and cumin in a ziplock bag
  2. Shake to thoroughly coat roast
  3. Cook in hot skillet for 2 Minutes per side
  4. Move roast to slow cooker
  5. Lower heat in skillet to medium low
  6. Add oil, onion, and garlic to skillet cook 2 - 3 minutes
  7. Add juice and merlot
  8. Cook 2 -3 minutes
  9. Pour over roast in slow cooker
  10. Add carrots, potatoes, stock and Worcestershire sauce
  11. Cook 4 - 8 hours (the longer the more tender the meat)
  12. Remove roast and let rest 5 minutes or more
  13. Slice meat, and serve
