Crockpot Chicken and Sausage Gumbo Recipe

Serves: 10-12
Ingredients
Roux:
  • ¼ Cup Canola Oil
  • ½ Stick Butter
  • ½ Cup Flour
Gumbo:
  • 3 Cups Vegetable Stock
  • 2 LBS Chicken, Cooked and Cubed
  • 1¾ LBS Sausage, Cooked and Cubed
  • 1 Head Celery, Chopped
  • 2 Green Bell Peppers, Chopped
  • 1 Yellow Onion, Chopped
  • 2 TBSP Minced Garlic
Seasoning:
  • Black Pepper to Taste
  • Kosher Salt to Taste
  • ¼ TSP Cayenne Pepper
Instructions
  1. In Skillet, add butter & oil cook over medium high heat
  2. Once melted, add flour, stir constantly for 3 -4 minutes
  3. Lower heat to medium low; Continue to cook and stir for 15 more minutes
  4. In crock pot add vegetable stock, vegetables, sausage, and chicken
  5. Mix to combine
  6. Add spices and mix
  7. Pull ingredients to one side and pour roux into stock
  8. Mix everything to combine
  9. Cook on low for 5 - 6 hours
  10. Serve as is or over bed of rice (optional)
