One Pot Pasta Recipe With Spinach & Zucchini
- 16 OZ Vermicelli
- 28 OZ Diced Tomatoes
- ½ Cup Onion, Chopped
- 4 TBSP Garlic, Minced
- 1 TBSP Italian Seasoning
- ½ TSP Basil
- ½ TSP Oregano
- 6 Cups Vegetable Stock
- 1 Zucchini, Rough Cut
- ½ LB Baby Spinach
- Black Pepper, to taste
- Sea Salt, to Taste
- Combine all ingredients but only half the spinach in pot
- Cook on high until it comes to boil, covered (roughly 5 - 6 minutes)
- Add remaining spinach, stir
- Reduce heat to medium and cook 10 more minutes
- Stir occasionally
- Serve in bowl with touch of pepper & sea salt, sprinkle of grated parmesan and shredded mozzarella (optional).
