One Pot Pasta Recipe With Spinach & Zucchini

Serves: 6-8
Ingredients
  • 16 OZ Vermicelli
  • 28 OZ Diced Tomatoes
  • ½ Cup Onion, Chopped
  • 4 TBSP Garlic, Minced
  • 1 TBSP Italian Seasoning
  • ½ TSP Basil
  • ½ TSP Oregano
  • 6 Cups Vegetable Stock
  • 1 Zucchini, Rough Cut
  • ½ LB Baby Spinach
  • Black Pepper, to taste
  • Sea Salt, to Taste
Instructions
  1. Combine all ingredients but only half the spinach in pot
  2. Cook on high until it comes to boil, covered (roughly 5 - 6 minutes)
  3. Add remaining spinach, stir
  4. Reduce heat to medium and cook 10 more minutes
  5. Stir occasionally
  6. Serve in bowl with touch of pepper & sea salt, sprinkle of grated parmesan and shredded mozzarella (optional).
