Roasted Chicken Breast and Cauliflower Recipe

Serves: 5-6
Ingredients
  • 2.5 LBS Chicken Breasts
  • 1.5 Heads of Cauliflower Florets
  • 4 TBSP Garlic, Minced
  • 2 TBSP Parsley, Chopped
  • 2 TBSP Dried Oregano
  • 1 TSP Sea Salt
  • 1 TSP Black Pepper
  • 4 TBSP Chicken Stock
  • Juice of 2 Lemons
Instructions
  1. Combine marinade ingredients in large bowl
  2. Cut chicken into 1 inch squares
  3. Add Cauliflower and chicken to marinade, toss to coat and marinade in refrigerator for 1 - 4 hours
  4. Preheat oven to 350
  5. Spread chicken and broccoli mixture onto cookie sheet
  6. Bake for 35 Minutes
  7. Serve as is in bowl or plate
