Roasted Chicken Breast and Cauliflower Recipe
- 2.5 LBS Chicken Breasts
- 1.5 Heads of Cauliflower Florets
- 4 TBSP Garlic, Minced
- 2 TBSP Parsley, Chopped
- 2 TBSP Dried Oregano
- 1 TSP Sea Salt
- 1 TSP Black Pepper
- 4 TBSP Chicken Stock
- Juice of 2 Lemons
- Combine marinade ingredients in large bowl
- Cut chicken into 1 inch squares
- Add Cauliflower and chicken to marinade, toss to coat and marinade in refrigerator for 1 - 4 hours
- Preheat oven to 350
- Spread chicken and broccoli mixture onto cookie sheet
- Bake for 35 Minutes
- Serve as is in bowl or plate
