Instant Pot Bourbon Pork Tenderloin With Sweet Potatoes
- 1¾ Cups Apple Juice
- ⅓ Cup Bourbon
- 2 TBSP Honey
- 2 TBSP Spicy Brown Mustard
- Black Pepper to Coat Tenderloin
- 2 sweet apples, medium sized, sliced
- 3 Sweet potatoes or yams, halved
- In Instant Pot inner pot, combine sauce ingredients and whisk
- Coat tenderloins with black pepper
- Add pork to Instant Pot inner pot, cover and refrigerate for 30 - 60 minutes
- Flip it half way
- Place inner pot into instant pot
- Add apples and potatoes
- Pressure Cooker settings - High for 18 Minutes, Manual
- When pressure cooker timer is done, do a quick release
- Rest pork for 5 minutes
- Slice tenderloin
- Serve tenderloin with apples and sweet potatoes
- Optionally, reduce leftover juices into a gravy with a thickener
