Instant Pot Bourbon Pork Tenderloin With Sweet Potatoes

Serves: 6-8
Ingredients
Marinade:
  • 1¾ Cups Apple Juice
  • ⅓ Cup Bourbon
  • 2 TBSP Honey
  • 2 TBSP Spicy Brown Mustard
2¾ LBS Pork Tenderloin
  • Black Pepper to Coat Tenderloin
  • 2 sweet apples, medium sized, sliced
  • 3 Sweet potatoes or yams, halved
Instructions
  1. In Instant Pot inner pot, combine sauce ingredients and whisk
  2. Coat tenderloins with black pepper
  3. Add pork to Instant Pot inner pot, cover and refrigerate for 30 - 60 minutes
  4. Flip it half way
  5. Place inner pot into instant pot
  6. Add apples and potatoes
  7. Pressure Cooker settings - High for 18 Minutes, Manual
  8. When pressure cooker timer is done, do a quick release
  9. Rest pork for 5 minutes
  10. Slice tenderloin
  11. Serve tenderloin with apples and sweet potatoes
  12. Optionally, reduce leftover juices into a gravy with a thickener
