BBQ Bacon Pineapple Chicken | Grilled Chicken Recipe
- 3 LBS Boneless, Skinless Chicken Breasts
- 1 Can Diced Pineapples, Drained
- 6 Strips Cooked Bacon, Chopped
- ½ Red Onion Thinly Sliced
- 1½ Cups Dark Brown Sugar
- 1½ Cups Ketchup
- ¾ Cup Apple Cider Vinegar
- ¼ Cup Water
- 2 TBSP Worcestershire Sauce
- 3 TBSP Dried Mustard
- 2 TBSP Paprika
- ½ TBSP Cinnamon
- Dash Kosher Salt
- Dash Black Pepper
- 1 TBSP Frank’s Red Hot Sauce
- ½ Red Onion, Diced
- Combine all BBQ Sauce ingredients in blender and blend until smooth
- Trim Chicken of excess fat
- Pound breasts flat with mallet, rolling pin or can
- Place onions, bacon and chicken in gallon Ziploc bag or other deep container.
- Add BBQ Sauce
- Add Pineapple Chunks
- Marinade for 4 hours
- BBQ on grill for 10 minutes per side or until cooked through.
