Instant Pot Chicken Cacciatore
Total time
- 1¼LB Boneless, Skinless Chicken Breast
- 2 Cups Chicken Stock
- 1 Yellow Onion, Rough Chop
- 1 Heart Celery, Rough Chop
- 28 OZ Crushed Tomatoes
- 28 OZ Petite Diced Tomatoes
- 3 TBSP Minced Garlic
- 1 TBSP Rosemary
- 1 TBSP Oregano
- 1 TBSP Thyme
- 1 TBSP Basil
- Set Instant Pot to Sauté for 15 Minutes
- Add 4 - 6 TBSP Stock
- Salt and Pepper Chicken
- Add to Instant Pot
- Brown chicken for 5 - 6 minutes per side
- Flip and add some additional stock
- Add onion and celery
- Add some more stock
- Cancel sauté
- Add spices and mix to combine
- Add tomatoes
- Add chicken
- Add remaining stock
- Pressure cook on manual for 15 minutes
- Natural Pressure release for 20 minutes, then quick release
- Serve over pasta and top with fresh mozzarella (optional)
