Slow Cooker Meatball Soup Recipe

Ingredients
Soup:
  • 3 Cups of Beef Stock
  • 2 28 OZ Can Crushed Tomatoes
  • ½ Cup Onion, Chopped
  • 1 TBSP Basil
  • 2 TBSP Garlic, Minced
  • 1 TBSP Oregano
  • 1 TBSP Rosemary
  • 1 TBSP Paprika
  • 1 TBSP Thyme
  • 1 TSP Black Pepper
  • 1 TSP Sea Salt
  • 2 Zucchini, Quartered and sliced
  • 2 Heads of Broccoli, Chopped
  • 1 Heart of Celery, Chopped
Meatballs:
  • 2 LBS Ground Beef
  • 1 TBSP Garlic, Minced
  • ½ Cup Onion, Chopped
  • 1 TBSP Marjoram
  • 1 TBSP Thyme
  • 1 TBSP Garlic Powder
  • 1 TBSP Onion Powder
  • ½ TSP Sea Salt
  • ½ TSP Black Pepper
  • 1 Bunch Kale, Chopped
Instructions
  1. Combine all meatball ingredients and roll into small meatballs (1 inch or less)
  2. Combine all soup ingredients into slow cooker and mix thoroughly to combine
  3. Add meatballs, gently
  4. Top with enough beef stock to cover
  5. Cover and cook on low for 6 - 8 hours
  6. Serve with scallions and cheese or oyster crackers (optional)
