Breakfast Quesadilla | Easy Breakfast Recipes
- 2 Eggs
- 1 TBSP Olive Oil
- 1 Piece cooked bacon
- 4 Grape Tomatoes, Sliced
- 1 Green Bell Pepper, Chopped
- Shredded Mexican Blend Cheese, enough to hold tortilla shells
- 2 X 8 inch flour tortillas
- Whisk eggs
- Heat skillet to low medium heat
- Add oil
- Add eggs
- Nudge the edges to help it come off
- Add bacon
- Add peppers
- Top with cheese and tortilla
- Cook 3 - 4 minutes
- Using a large plate, cover the skillet and flip onto plate
- Slide tortilla side down back onto skillet
- Top with shredded cheese and second tortilla
- Cook 2 - 3 minutes
- Remove from heat slice into sections and serve with salsa, pico de Gallo or sour cream.
