Ingredients
  • 2 Eggs
  • 1 TBSP Olive Oil
  • 1 Piece cooked bacon
  • 4 Grape Tomatoes, Sliced
  • 1 Green Bell Pepper, Chopped
  • Shredded Mexican Blend Cheese, enough to hold tortilla shells
  • 2 X 8 inch flour tortillas
Instructions
  1. Whisk eggs
  2. Heat skillet to low medium heat
  3. Add oil
  4. Add eggs
  5. Nudge the edges to help it come off
  6. Add bacon
  7. Add peppers
  8. Top with cheese and tortilla
  9. Cook 3 - 4 minutes
  10. Using a large plate, cover the skillet and flip onto plate
  11. Slide tortilla side down back onto skillet
  12. Top with shredded cheese and second tortilla
  13. Cook 2 - 3 minutes
  14. Remove from heat slice into sections and serve with salsa, pico de Gallo or sour cream.
