Instant Pot Shredded Beef Tacos Recipe

Ingredients
Marinade:
  • 2 TBSP Olive Oil
  • 2 TBSP Minced Garlic
  • 1 Cup Beef Stock
  • 1 TSP Oregano
  • 1 TSP Cumin
  • 1 TSP Paprika
  • 1 TBSP Sea Salt
  • 1 TBSP Black Pepper
3 LBS Chuck Roast
  • 1 TBSP Olive Oil
  • 1 Onion, Chopped
  • 1 Jar Salsa
  • 1 TSP Sea Salt
  • 1 TSP Black Pepper
  • Taco Seasoning
Toppings (optional):
  • Tomatoes
  • Pico de Gallo
  • Avocado
  • Shredded Cheese
  • Cilantro
  • Lettuce, Shredded
  • Sour Cream
Instructions
  1. Combine marinade ingredients in ziplock bag.
  2. Dice roast into small chunks and trim excess fat
  3. Add beef to marinade bag and refrigerate for 1 - 24 hours
  4. Set Instant Pot to Sauté 15 Minutes
  5. Add oil
  6. Add onions and cook 2 - 3 minutes
  7. Add beef and garlic and brown, 10 Minutes
  8. Shred beef
  9. Add remaining ingredients and turn Instant Pot to Pressure Cook setting
  10. Cook on High for 40 minutes
  11. Do a quick release when timer is up
