Steak and Eggs Breakfast Burrito Recipe

Serves: 5-6
Ingredients
  • Flour tortillas
  • ½ Cup Shredded Mexican Blend Cheese
  • Black Pepper
  • Garlic Powder
  • Kosher Salt
  • 8 Eggs
  • 1 Green Bell Pepper, Diced
  • 4 x .25 LB Thinly Sliced Steaks
  • ½ TBSP Olive Oil
Instructions
  1. Heat skillet to Medium
  2. Liberally season steaks with garlic salt, black pepper, salt on both sides
  3. Add oil to skillet to coat
  4. Add steaks to skillet
  5. Cook 2 - 3 minutes per side
  6. Remove meat from heat
  7. Rest meat for 5 minutes
  8. Meanwhile, season eggs with garlic, pepper and salt
  9. Whisk to thoroughly scramble
  10. Turn heat down to Medium low
  11. Add ½ TBSP olive oil and coat skillet
  12. Add eggs
  13. Cook 2½ minutes
  14. Top with bell pepper and cheese and mix to combine and melt cheese
  15. Optionally cover to expedite cheese melting
  16. Microwave 4 tortillas for 30 second intervals covered with a clean damp cloth, twice
  17. Plate one tortilla, add steak, eggs and roll into burrito
  18. Serve with salsa or pico de Gallo (optional)
