Steak and Eggs Breakfast Burrito Recipe
- Flour tortillas
- ½ Cup Shredded Mexican Blend Cheese
- Black Pepper
- Garlic Powder
- Kosher Salt
- 8 Eggs
- 1 Green Bell Pepper, Diced
- 4 x .25 LB Thinly Sliced Steaks
- ½ TBSP Olive Oil
- Heat skillet to Medium
- Liberally season steaks with garlic salt, black pepper, salt on both sides
- Add oil to skillet to coat
- Add steaks to skillet
- Cook 2 - 3 minutes per side
- Remove meat from heat
- Rest meat for 5 minutes
- Meanwhile, season eggs with garlic, pepper and salt
- Whisk to thoroughly scramble
- Turn heat down to Medium low
- Add ½ TBSP olive oil and coat skillet
- Add eggs
- Cook 2½ minutes
- Top with bell pepper and cheese and mix to combine and melt cheese
- Optionally cover to expedite cheese melting
- Microwave 4 tortillas for 30 second intervals covered with a clean damp cloth, twice
- Plate one tortilla, add steak, eggs and roll into burrito
- Serve with salsa or pico de Gallo (optional)
