Fried Rolled Chicken Taco Recipe

Serves: 8-10
Ingredients
  • 1½ LBS Boneless, skinless, Chicken Breasts (cut into cubes)
  • 4 TBSP Chicken Stock
  • ½ Cup Chopped, Yellow Onion
  • 2 TBSP Minced Garlic
  • 1 TSP Kosher Salt
  • 1 TSP Black Pepper
Seasoning
  • 1 Taco Seasoning package
  • ⅔ Cup chicken stock
  • 8 inch Flour Tortillas
  • Mexican Blend Shredded Cheese
  • Toothpicks
  • Canola Oil to fill skillet
Instructions
  1. Heat skillet over medium heat
  2. Add stock, chicken, onion, garlic, salt and pepper
  3. Cook for 5 minutes to brown chicken
  4. Add taco seasoning and remaining stock
  5. Cook 5 minutes
  6. Turn to low
  7. Scoop filling into tortilla
  8. Add Mexican blend cheese to cover
  9. Roll and seal tortilla
  10. Stick with toothpicks to hold together
  11. Roll 8 to 10 of these
  12. Heat canola oil at medium high
  13. Fry each taco for 2 - 3 minutes
  14. Remove toothpicks and serve with salsa, pico de Gallo or sour cream (optional)
