Smoked Sausage, Sweet Potatoes & Apples: Healthy Dinner Recipes

Ingredients
  • 26 OZ Eckrich Turkey Skinless Smoked Sausage Rope
  • 2 Sweet Potatoes, Skinned and Chopped
  • 3 Fuji Apples, Chopped
  • 3 Gala Apples, Chopped
  • 4 TBSP Vegetable stock
  • 2 TBSP Lemon Juice
  • 1 TBSP Fresh Thyme
  • 1 TSP Kosher Salt
  • 1 TSP Black Pepper
  • 1 TBSP Cinnamon
  • 2 Onions, Chopped
  • 2 Green Bell Peppers, Chopped
Instructions
  1. Preheat oven to 400 degrees
  2. Combine everything in a bowl except onion and pepper
  3. Mix to combine
  4. Using 2 13 x 10 Pans, add ½ Onion and ½ bell pepper to each pan
  5. Add half mixture to each pan
  6. Bake both pans for 60 minutes, rotating and switching shelves midway through
