Greek Chicken Salad Recipe

Serves: 5-6
Ingredients
  • 2¼ lbs boneless, skinless chicken breasts (Use my Greek Chicken Marinade recipe to marinade chicken breasts for 4-24 hours)
Salad:
  • Cucumbers
  • Calmata Olives
  • Green Olives
  • Lettuce Mix
  • Grape Tomatoes
  • Feta Cheese (optional)
Dressing:
  • 6 TBSP EVVO
  • 2 TBSP Balsamic Vinegar
  • 1 TSP Sea Salt
  • 1 TSP Black Pepper
Instructions
  1. Cut Cucumbers into slices or quartered slices
  2. Put all salad ingredients on serving platter for family style or large bowl and toss if using a bowl
  3. Turn stove top to medium heat
  4. Using a grill pan or skillet, add 3 -4 TBSP Chicken Stock, Butter, or Olive Oil to pan to keep chicken from sticking
  5. Add Chicken
  6. Cook 6 - 8 Minutes per side
  7. Rest for 2 -3 Minutes
  8. Cut into strips
  9. Serve chicken on top of salad
