Greek Chicken Salad Recipe
- 2¼ lbs boneless, skinless chicken breasts (Use my Greek Chicken Marinade recipe to marinade chicken breasts for 4-24 hours)
- Cucumbers
- Calmata Olives
- Green Olives
- Lettuce Mix
- Grape Tomatoes
- Feta Cheese (optional)
- 6 TBSP EVVO
- 2 TBSP Balsamic Vinegar
- 1 TSP Sea Salt
- 1 TSP Black Pepper
- Cut Cucumbers into slices or quartered slices
- Put all salad ingredients on serving platter for family style or large bowl and toss if using a bowl
- Turn stove top to medium heat
- Using a grill pan or skillet, add 3 -4 TBSP Chicken Stock, Butter, or Olive Oil to pan to keep chicken from sticking
- Add Chicken
- Cook 6 - 8 Minutes per side
- Rest for 2 -3 Minutes
- Cut into strips
- Serve chicken on top of salad
