Serves: 10-12
Ingredients
  • 1¾ LBS Potatoes, peeled and thinly sliced
  • 3 Leeks, Rinsed Thoroughly and Sliced
  • 82 OZ (Or enough to fill the pot) Vegetable Stock
  • 16 OZ Sour Cream
  • 1 TSP Sea Salt
  • 1 TSP Black Pepper
  • 3 TBSP Minced Garlic
  • 1 - 2 Scallions, chopped for garnish
Instructions
  1. Combine everything in slow cooker except scallions
  2. Cook on low 6 hours
  3. Blend with emersion blender
  4. Garnish with scallions
