Mexican Chicken Tater Tot Bake Recipe

Serves: 6-8
Ingredients
  • 2 LBS Chicken
  • 1 TSP Sea Salt
  • 1 TSP Ground Black Pepper
  • 1 TBSP Olive Oil
  • 1 Yellow Onion, Chopped
  • 1 Green Bell Pepper, Chopped
  • 1 Red Bell Pepper, Chopped
  • 1 Cup Chicken Stock
  • 8 OZ Sour Cream
  • 1 TBSP Worcestershire Sauce
  • 16 OZ Salsa
  • 8 OZ Frontera Taco Sauce Mild Red Chile + Cumin
  • 8 OZ Shredded Mexican Style Blend Cheese
  • 32 OZ Frozen Tater Tots
Instructions
  1. Preheat oven to 350 degrees
  2. Cook chicken in skillet medium to medium high heat 7 minutes or until cooked.
  3. Season with pinch of salt & pepper while cooking.
  4. Add onion, peppers and 1 TBSP olive oil.
  5. Cook additional 5 minutes
  6. Strain
  7. Add stock, sour cream, Worcestershire sauce, and salsa
  8. Cook 2 - 3 minutes
  9. Top with Mexican cheese and then cover with tater tots
  10. Bake 45 minutes
  11. Serve!
