Chocolate Peppermint Pattie Stuffed Cookies

Ingredients
Dry:
  • 2¼ Cup All-Purpose Flour
  • 1 TSP Baking Soda
  • 1 TSP Salt
  • ¾ Cup Cocoa
Wet:
  • 1 Cup (2 Sticks) Unsalted Butter
  • ¾ Cup Dark Brown Sugar
  • ¾ Cup Granulated Sugar
  • 1 TSP Vanilla Extract
  • 3 Eggs

Instructions
  1. Preheat oven to 375 degrees
  2. Combine dry ingredients in a bowl
  3. Beat butter, granulated sugar, dark brown sugar & vanilla extract in mixing bowl until creamed.
  4. Add eggs one at a time and beat until combined
  5. Slowly combine dry ingredients to mixing bowl and continue to mix
  6. Scoop TBSP scoops of batter onto ungreased baking sheets
  7. Gently press one peppermint Pattie mini into each dough ball and wrap dough around the pattie to cover
  8. Bake 8 - 11 minutes
  9. Cool on sheets 2 minutes
  10. Move to cooling racks to finish cooling
