One Pan Autumn Pasta

Serves: 6
Ingredients
  • 1 Bunch of Kale, rough chop and peeled off stems
  • 4 Cloves of Garlic, fine chopped
  • 1 TBSP Olive Oil
  • 2 Zucchini Squash, skinned and chopped
  • 2 Yellow Squash, skinned and chopped
  • Kosher Salt
  • Black Pepper
  • 1 Pint Grapes Tomatoes, halved
  • Parmesan Cheese
  • Fresh Basil Leaves, fine chopped
  • Rigatoni Pasta
Instructions
  1. Cook pasta per directions, drain but save 1 cup water
  2. Add Olive Oil and garlic to skillet, 2 minutes medium-high heat
  3. Add squash, and zucchini, salt and pepper to taste in pan on medium high heat for 5 minutes +/-
  4. Add Kale and ½ cup water
  5. Add tomatoes and remaining water, high heat until water is almost all evaporated
  6. Top with Parmesan cheese
  7. Serve and top with basil
