Prep Time 5 minutes
Cook Time 12 minutes
Servings: 16

Ingredients

  • 2 cups raw pecans
  • 2 cups raw walnuts
  • 3 tbsp melted unsalted butter
  • 1/4 cup light brown sugar (plus a pinch more for topping)
  • 2 tsp ground nutmeg
  • 1/2 tsp sea salt (for finishing)
  • 1/4 cup maple syrup (divided)

Method

Preheat Oven
  1. Preheat your oven to 350°F (175°C).
Combine on Pan
  1. Add the pecans and walnuts to a large parchment-lined baking sheet.
  2. Top the nuts with the melted butter, light brown sugar, cinnamon, nutmeg, sea salt, and half of the maple syrup (1/8 cup).
  3. Toss everything together directly on the pan until the nuts are evenly coated.
Bake
  1. Bake for a total of 12 to 15 minutes, or until the nuts are golden brown and fragrant. Toss and stir them once at the halfway point to ensure even cooking and prevent burning.
Finish
  1. Remove the pan from the oven. While the nuts are still hot, immediately drizzle them with the remaining 1/8 cup of maple syrup. Sprinkle on a generous pinch of flaky sea salt, a little extra cinnamon, and a light dusting of brown sugar.
Cool
  1. Stir one final time to combine and coat. You can enjoy them warm, or let them cool completely on the baking pan. As they dry and cool, the sugary coating will harden and crisp up.

GIFTING & STORAGE TIPS: Never store these nuts warm, as trapped steam will ruin the crunchy coating. Once fully cooled at room temperature, transfer the candied nuts to an airtight glass jar. They'll stay fresh in a cool, dry pantry for up to 3 weeks, making them perfect for make-ahead gifts! For longer storage, freeze them in an airtight bag for up to 1 month.
