Boxty (or Irish Potato Pancakes as they’re sometimes called) are so easy and yet so tasty. “Boxty” is an Irish phrase that means “poorhouse bread.” Looked upon as peasant food in Ireland, potatoes were just about all the poorest of the Irish had to eat during the Great Famine. Though simple, it made a filling meal.
This dish is also very flexible. It can be served for breakfast, as a dinner side dish or even a snack.
I use a mixture of fresh potatoes and leftover mashed potatoes to create these delicious Irish potato cakes. You can eat them plain, or serve them with sour cream, jam or however you like! Did I mention this was a flexible meal?
Of course, you can eat these potato pancakes anytime, or add them to your St. Patrick’s day menu!
I’ll leave this Traditional Irish rhyme for you (though it may be a wee bit outdated):
Boxty on the griddle,
Boxty in the pan,
If you can’t make boxty,
You’ll never get a man.
Boxty on the griddle,
Boxty in the pan,
The wee one in the middle,
That’s the one for Mary Anne.

Boxty Recipe: An Easy Irish Potato Cakes Recipe (Potato Pancakes)
- 1 Cup Mashed Potatoes (No instant)
- 1½ Cups Potatoes Skinned and Grated
- 1 TSP Baking Soda
- ⅛ TSP Kosher Salt
- 1½ Cups All-Purpose Flour
- ¾ Cup Heavy Cream
- ¾ Cup Milk
- Wring out all fluid from grated potatoes
- Combine cream and milk into container
- Combine mashed potatoes and grated potatoes in a bowl
- Add baking soda, salt and flour and combine
- Add ¾ Cup cream milk mixture
- Mix
- Add remaining cream and milk
- Low heat skillet, add TBSP butter
- Ladle mixture out
- Cook 12 - 15 minutes first side
- Flip and cook 8 -12 minutes second side
- Serve with sour cream and chives, or jam, or plain or dash of sugar
