This slow cooker meatball soup is an easy and healthier crockpot dinner recipe! The recipe for this can be used as is or you can add your own favorite vegetables or make it spicy by adding peppers or hotter spices.
The meatballs are made without eggs, breadcrumbs or other binding agents just to keep it on the healthy side. However, traditional meatballs work great with this soup as well!
With ground beef, seasonings, veggies and a flavorful broth, I’m sure you will enjoy this tasty meatball soup!

Slow Cooker Meatball Soup: Crockpot Meatballs Dinner Recipe
- 3 Cups of Beef Stock
- 2 28 OZ Can Crushed Tomatoes
- ½ Cup Onion, Chopped
- 1 TBSP Basil
- 2 TBSP Garlic, Minced
- 1 TBSP Oregano
- 1 TBSP Rosemary
- 1 TBSP Paprika
- 1 TBSP Thyme
- 1 TSP Black Pepper
- 1 TSP Sea Salt
- 2 Zucchini, Quartered and sliced
- 2 Heads of Broccoli, Chopped
- 1 Heart of Celery, Chopped
- 2 LBS Ground Beef
- 1 TBSP Garlic, Minced
- ½ Cup Onion, Chopped
- 1 TBSP Marjoram
- 1 TBSP Thyme
- 1 TBSP Garlic Powder
- 1 TBSP Onion Powder
- ½ TSP Sea Salt
- ½ TSP Black Pepper
- 1 Bunch Kale, Chopped
- Combine all meatball ingredients and roll into small meatballs (1 inch or less)
- Combine all soup ingredients into slow cooker and mix thoroughly to combine
- Add meatballs, gently
- Top with enough beef stock to cover
- Cover and cook on low for 6 - 8 hours
- Serve with scallions and cheese or oyster crackers (optional)
