How To Make Stuffed Bell Peppers: Easy Stuffed Peppers With Ground Beef and Rice

Ingredients
- 2 Cups Cooked White Long Rice
- 4 Green Bell Peppers, seeded, cored and tops cut off
- 3 Cloves Garlic, Chopped
- 2 Red Bell Peppers, Seeded, Cored, and Sliced
- 8 OZ white Mushrooms
- ½ Red Onion
- 1½ Ground Beef
- 2 TBSP Olive Oil
- ½ TSP Dried Parsley
- 14.5 oz can Diced Tomatoes
Instructions
- Preheat stove to 350.
- Boil water, add green bell peppers for 4 minutes to soften
- In a skillet, add olive oil, chopped red bell pepper & red onion on medium-high & cook for 3 minutes
- Add mushrooms, salt & pepper, cook 2 minutes
- Add ground beef, garlic, dried parsley salt and pepper, cook 6 minutes or until browned
- Add cooked rice & diced tomatoes
- Add ¼ inch water to baking dish
- Fill the green bell peppers with filling and place in baking dish
- Bake at 350 for 30 minutes
- Rest 5 to 10 minutes and serve!
