This recipe is from another Blue Apron shipment. In this video, I follow the Blue Apron instructions and make Beef and Summer Corn Enchiladas with Kale and Monterey Jack Cheese. Their meals haven’t disappointed me so far, so I am continuing my subscription.
This meal was a delicious mix of ancho chile powder and other Mexican spices. The beef, corn and rice complimented each other well. Cook time was about 40-45 minutes.
Final Opinion: The whole family enjoyed their enchiladas and we would make this again.
