This chicken quesadilla recipe is easy to make and requires little preparation. Quesadillas make great hand food too (eat with your hands, no utensils)! As an added bonus, they are also generally accepted by almost any kid, so that’s a plus if you have finicky eaters like me (my children love them)!
This recipe is great for lunch, quick and simple dinners or as a no fuss party meal.
Serve the quesadillas with a side of fruit or with salsa or sour cream for dipping.

Easy Chicken Quesadilla Recipe: How To Make Chicken Quesadillas
- 4 Chicken Breasts, Chopped
- 2 Green Bell Peppers, Sliced
- ½ Red Onion, Sliced
- 1 Package Taco Seasonings
- 4 TBSP Olive Oil
- 2 TBSP Chicken Stock
- 10 Flour Tortillas
- 8 OZ Shredded Mexican Blend Cheese
- Combine Chicken, Oil and Taco Seasoning in bowl and mix.
- Cook seasoned Chicken in skillet 10 minutes over medium heat
- Add Stock
- Add Onions and Peppers
- Cook 8 to 10 minutes
- Place Tortilla Shell on Skillet medium heat
- Top with Shredded Cheese
- Top with filling
- Top with Shredded Cheese
- Cook for 2-3 minutes per side
- Cut into Quarters and serve with salsa or pico de gallo and sour cream
