If you’re ready for something different than traditional pumpkin pie, this is a great alternative. Whether it’s for a Fall party, a Thanksgiving dessert, or you just want a sweet treat for the family, you’ll be happy you added this to your menu.
Mr. B’s Tips for Success
Watch the Butter Closely: Browning butter happens fast. Don’t walk away from the stove during those 5 to 7 minutes. The moment you see those brown flecks and smell a nutty aroma, pull it off the heat so it doesn’t burn.
Puree vs. Pie Filling: Make sure you use 100% pure pumpkin puree. Pumpkin pie filling already has spices and sweeteners added, which will throw off the flavor and texture of this cake.
Fold, Don’t Stir: When combining the whipped cream and cream cheese for the frosting, use a spatula to gently fold them together. Stirring aggressively will knock all the air out of the whipped cream, and you want this frosting to stay light and airy.
Make-Ahead and Storage Instructions
Making it Ahead: This is the perfect dessert for large gatherings like Thanksgiving or fall potlucks because it actually tastes better after chilling in the fridge for a few hours. You can easily bake the cake and add the frosting a full day in advance.
How to Store: Because of the cream cheese and whipped cream frosting, this cake needs to be refrigerated. Cover the 9×13 pan tightly with plastic wrap or a fitted lid and keep it in the fridge for up to 4 days.
Wait on the Caramel: If you’re making this ahead of time, wait to drizzle the caramel sauce and sprinkle the flaky sea salt until right before you serve it so the caramel doesn’t weep into the frosting.
A perfect 10!
If your family is anything like mine, getting a unanimous “10 out of 10” from my picky sons is a true win. They aren’t the biggest fans of pumpkin pie, but they loved this pumpkin crunch cake. Give it a try and see if you agree!

Pumpkin Crunch Cake Recipe
Ingredients
Method
- Preheat and Prep: Preheat your oven to 350°F. Grease a 9x13 baking dish with butter or cooking spray.
- Brown the Butter: In a pan over medium heat, cook the two sticks of butter for 5 to 7 minutes. Stir occasionally until you see brown flecks and a nice golden color. Remove directly from the heat and set aside to cool slightly.
- Mix the Pumpkin Filling: In a large bowl, whisk together the pumpkin puree, heavy cream, eggs, vanilla extract, dark brown sugar, granulated sugar, cinnamon, ginger, nutmeg, ground clove, espresso powder, and salt until completely smooth. Pour the mixture evenly into your greased baking dish.
- Create the Dry Topping: In a separate bowl, whisk together the flour, granulated sugar, light brown sugar, baking powder, and salt. Sprinkle this dry mixture evenly over the pumpkin filling in the baking dish. Do not stir.
- Add the Crunch: Sprinkle the chopped pecans evenly over the dry topping.
- Drizzle the Butter: Drizzle the browned butter evenly over the top of the entire dish. Again, do not stir.
- Bake: Bake at 350°F for 50 to 60 minutes. The center should have a little jiggle—that's the perfect custardy texture! Let the cake cool completely for at least 20 to 30 minutes.
- Whip the Cream: In a chilled bowl, whip the heavy whipping cream until stiff peaks form. Set aside.
- Make the Frosting Base: In another bowl, mix the cream cheese, powdered sugar, and vanilla extract until thoroughly combined.
- Fold and Frost: Gently fold the whipped cream into the cream cheese mixture, working carefully so you don't lose the air. Spread the light, fluffy frosting over the cooled cake.
- The Final Flare: Finish it off with a drizzle of caramel sauce and a few pinches of flaky sea salt before slicing.
