When I think of comfort food, a good stew always comes to mind. Chicken stew feels just right on a cold wintery or fall day. Of course, this meal could hit the spot any time.
For this recipe, I use boneless, skinless chicken breast, chicken broth and other vegetables. The earthy texture and taste of the fingerling potatoes shines through and adds flavor to the broth. They also provide some nice fall colors. The vegetables in this dish include carrots, celery and onions, which add both add flavor and color.
This stew is versatile and you could easily substitute or add additional vegetables like broccoli, peas or whatever you prefer. A simple and healthy one pot recipe for a delicious chicken dinner!

How To Make Easy Chicken Stew Recipe: How to Make Chicken Stew
- 1 Onion, diced
- 1.5 cup carrots, chopped
- 1 cup celery, chopped
- 3 lbs fingerling potatoes, quartered or halved depending on size
- 3 lbs chicken, cubed
- 2 tbsp chicken spice blend
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp minced garlic
- 1.5 cup flour
- 64 oz chicken stock
- 3 tbsp corn starch
- In pot on medium high heat add olive oil, butter, minced garlic, onion and celery
- Cook until they soften and onion glazes
- While the onion and celery cook, combine flour, 1 TBSP spice blend and chicken in a bowl and mix to thoroughly coat chicken.
- Once the onion and celery have softened, add chicken mixture to pot and brown
- Add carrots
- Add potatoes
- Add chicken stock
- Add remaining spice blend
- Bring to bowl and let simmer for 2 or more hours
- To thicken the stew, add cornstarch and stir to combine then serve.
