A one pan smoked turkey sausage, sweet potatoes and apples recipe! Add in some onions, seasonings and bell peppers and you’ve got a yummy, flavorful meal.
The apples and sweet potatoes make this a great dinner for the Fall season, but I enjoy making this year round.

Smoked Sausage, Sweet Potatoes & Apples: Healthy Dinner Recipes

Ingredients
- 26 OZ Eckrich Turkey Skinless Smoked Sausage Rope
- 2 Sweet Potatoes, Skinned and Chopped
- 3 Fuji Apples, Chopped
- 3 Gala Apples, Chopped
- 4 TBSP Vegetable stock
- 2 TBSP Lemon Juice
- 1 TBSP Fresh Thyme
- 1 TSP Kosher Salt
- 1 TSP Black Pepper
- 1 TBSP Cinnamon
- 2 Onions, Chopped
- 2 Green Bell Peppers, Chopped
Instructions
- Preheat oven to 400 degrees
- Combine everything in a bowl except onion and pepper
- Mix to combine
- Using 2 13 x 10 Pans, add ½ Onion and ½ bell pepper to each pan
- Add half mixture to each pan
- Bake both pans for 60 minutes, rotating and switching shelves midway through
