On the menu today is a one pan Southwestern chicken and broccoli recipe! This easy chicken recipe includes a southwest dry rub that gives this meal a little kick. I’ve mentioned before that I tend to go a bit easier on the spices for my little guys, so adjust the spice levels to your desired taste.

Southwestern Chicken & Broccoli: Easy Southwest Chicken Recipes
- 4 Boneless, Skinless, Chicken Breasts, Ponded Flat
- 4 Heads of Broccoli, Broken into Florets
- 1 Lemon
- 3 TSP Paprika
- 5 TSP Thyme
- 1 TSP Nutmeg
- 2 TSP Oregano
- 2 TSP Onion Powder
- 2 TSP Garlic Powder
- 2 TSP Cayenne Pepper
- 3 TSP Salt
- 4 TSP Black Pepper
- Boil Water
- Add Broccoli
- Cook for 2 Minutes and dump into ice bath
- Dust chicken with spice mix
- Place onto grill pan at 4 - 5 heat (Medium), season side down.
- Season other side
- Cook 4 - 5 minutes per side
- Remove from heat and chop
- Add 2 TSP of spice mix to strained broccoli
- Add chicken back to pan
- Add broccoli to pan
- Cook 2 - 3 minutes
- Squeeze juice of 1 lemon over dish and serve
- Optionally serve with rice or noodles
