This baked rice pudding recipe is based on traditional European rice puddings which typically combine rice, milk, and sugar as the base. Additions can include cinnamon, raisins, vanilla, cocoa powder and even almonds.
In this version I stay fairly traditional except for the golden raisins. Feel free to use any kind of raisins you like. You can either use leftover rice you have on hand for this recipe, or make it fresh like I did.
This is a nice switch up if you’re craving a decadent and creamy dessert but you want something other than your standard cake or pie. Give this baked rice pudding recipe a try and let me know what you think!

How To Make A Baked Rice Pudding Recipe: Easy Rice Pudding Recipe With Cooked Rice & Raisins
- 2 Eggs, Whipped
- 1⅓ Cup Milk
- ½ Cup Sugar
- 2 TSP Vanilla
- 1 TBSP Softened Butter, plus extra to grease cooking dish
- 2 Cups Cooked Rice
- ½ Cup Golden Raisins
- Water for baking bath
- Cinnamon and Nutmeg to dust servings
- Preheat oven to 325
- Combine Eggs, Milk, Sugar, Vanilla & Butter in a bowl and whisk to combine
- In a seperate bowl combine rice and raisins
- Combine eggs and milk mixture with rice and raisins and whisk to combine
- Pour into pre-buttered baking / casserole dish
- Place rice pudding dish into second casserole dish with water (bath)
- Bake for 1 hour at 325
- Slice and dust with Cinnamon and Nutmeg
