I love grilling. Whether it’s meat or veggies, there’s nothing like the taste of food coming off the grill. For this fire roasted grilled vegetables recipe, I didn’t break out the grill, but I used a homemade beer keg roaster. I made this during the filming of an off-grid type tv show. Long story short, it never ended up airing, but we still took home a pretty cool keg roaster from the experience.
Don’t have a beer keg roaster just sitting around your backyard? Never fear, you can still make this recipe! Just use a grilling basket and grill the vegetables over the open fire of your grill, instead of using the keg roaster. Either way, the apple wood imparts a great smoke taste to the vegetables!
Feel free to switch up the variety of vegetables to include your favorites. This easy grilled vegetables recipe makes a great side dish and is super flavorful! Looking for more vegetable recipes? Try these:
