This is an easy grilled flank steak recipe. You can marinate this steak for 2-3 hours or even overnight. I used a mostly dry rub with olive oil and a mix of seasonings, including rosemary, thyme and lemon pepper. What you get is a flavorful steak ready for the grill!
My family likes their steak well done. They will go on a hunger strike if they see the least bit of pink in their meat. So in the cooking video that goes with this recipe, I did cook it longer than is optimal for this kind of thin cut steak. For medium or medium rare, grill time will be 4-5 minutes per side.

Grilled Flank Steak Recipe: How To Cook Beef Flank Steak On The Grill
- 4 TBSP Olive Oil
- 2 TBSP Black Pepper
- 2 TBSP Thyme
- 2 TBSP Rosemary Leaves
- 2 TBSP Lemon Pepper
- 2 TBSP Steak Seasoning
- 3 TBSP Brown Sugar
- ¼ TSP Red Pepper (or to taste)
- Combine rub ingredients
- Rub both sides of steak with marinade 2 hours to overnight
- Cook over direct heat 4-5 minutes per side
- Serve with roasted / grilled vegetables, mashed potatoes, or side of your choice
