Mexican Chicken Tater Tot Bake | Easy Dinner Recipes
- 2 LBS Chicken
- 1 TSP Sea Salt
- 1 TSP Ground Black Pepper
- 1 TBSP Olive Oil
- 1 Yellow Onion, Chopped
- 1 Green Bell Pepper, Chopped
- 1 Red Bell Pepper, Chopped
- 1 Cup Chicken Stock
- 8 OZ Sour Cream
- 1 TBSP Worcestershire Sauce
- 16 OZ Salsa
- 8 OZ Frontera Taco Sauce Mild Red Chile + Cumin
- 8 OZ Shredded Mexican Style Blend Cheese
- 32 OZ Frozen Tater Tots
- Preheat oven to 350 degrees
- Cook chicken in skillet medium to medium high heat 7 minutes or until cooked.
- Season with pinch of salt & pepper while cooking.
- Add onion, peppers and 1 TBSP olive oil.
- Cook additional 5 minutes
- Strain
- Add stock, sour cream, Worcestershire sauce, and salsa
- Cook 2 - 3 minutes
- Top with Mexican cheese and then cover with tater tots
- Bake 45 minutes
- Serve!
