Chicken and potatoes are probably one my favorite things to eat and always a huge hit with my family! When making chicken dishes, I normally use chicken breasts due to my kids’ preference for white meat. But chicken thighs are so flavorful and juicy, I knew they would love this substitution!
This one pot chicken thighs, carrots and potatoes recipe only needs a few minutes of preparation. I throw all of the ingredients into my dutch oven and let them bake to blend into a flavorful dish. And to top it all off, this one pot recipe meant little clean up for me!
