What’s better than a nice, warm soup simmering all day in a crockpot? This slow cooker leek and potato soup recipe is slow cooked and then blended down (using an immersion blender) into a nice, creamy and tasty soup.
Simple to make and you can garnish it with green onions, chives, cheddar cheese or however you like!
Enjoy this soup for lunch, serve with your dinner, or make it a meal unto itself by adding some bread, a side salad or other vegetables.

Slow Cooker Leek and Potato Soup Recipe | Creamy Crockpot Leek Potato Soup
- 1¾ LBS Potatoes, peeled and thinly sliced
- 3 Leeks, Rinsed Thoroughly and Sliced
- 82 OZ (Or enough to fill the pot) Vegetable Stock
- 16 OZ Sour Cream
- 1 TSP Sea Salt
- 1 TSP Black Pepper
- 3 TBSP Minced Garlic
- 1 - 2 Scallions, chopped for garnish
- Combine everything in slow cooker except scallions
- Cook on low 6 hours
- Blend with emersion blender
- Garnish with scallions
