This one pan chicken, spinach and tomatoes meal is a quick and healthy dinner recipe. In just seventeen minutes you can have a freshly cooked hot meal that’s tasty without the guilt. This recipe is made with shredded chicken, frozen spinach (you can substitute with fresh spinach), tomatoes and a few seasonings.
This is a very versatile recipe that can be remixed however you like. You can make this recipe your own with some simple spice additions or swapping out the spinach for different vegetables. I served this over rice, but serve it over whatever you like. Give this one a try tonight!

One Pan Chicken and Spinach Recipe: Easy Shredded Chicken Recipes
- 1 TSP Minced Garlic
- 1½ LBS Chicken Tenderloins
- 2 14.5 OZ Cans Diced Tomatoes
- 10 OZ cooked spinach (frozen or fresh)
- Salt & pepper to taste
- Add oil and minced garlic to skillet
- Cook 1 minute
- Add chicken tenders; cook chicken 6 - 7 minutes per side
- Shred cooked chicken with a fork
- add diced tomatoes
- Cook 2 minutes
- Add pinch of salt and pepper
- Add spinach
- Cook additional minute
- Serve over rice
