Chocolate Peppermint Pattie Surprise Cookies | Stuffed Cookie Recipe
- 2¼ Cup All-Purpose Flour
- 1 TSP Baking Soda
- 1 TSP Salt
- ¾ Cup Cocoa
- 1 Cup (2 Sticks) Unsalted Butter
- ¾ Cup Dark Brown Sugar
- ¾ Cup Granulated Sugar
- 1 TSP Vanilla Extract
- 3 Eggs
- Preheat oven to 375 degrees
- Combine dry ingredients in a bowl
- Beat butter, granulated sugar, dark brown sugar & vanilla extract in mixing bowl until creamed.
- Add eggs one at a time and beat until combined
- Slowly combine dry ingredients to mixing bowl and continue to mix
- Scoop TBSP scoops of batter onto ungreased baking sheets
- Gently press one peppermint Pattie mini into each dough ball and wrap dough around the pattie to cover
- Bake 8 - 11 minutes
- Cool on sheets 2 minutes
- Move to cooling racks to finish cooling
