If you’re looking for slow cooker dinner ideas, give this crockpot chicken and sausage gumbo recipe a try! I make a roux on the stove and then combine the chicken, sausage, bell peppers, celery, onion, seasonings and chicken stock in the crockpot.
My recipe is on the mild side (I’ve mentioned before that my family are spice wimps). But if you like your gumbo spicy like I do, feel free to increase the cayenne pepper!

Crockpot Gumbo: Chicken and Sausage Gumbo Recipe | Slow Cooker Gumbo
- ¼ Cup Canola Oil
- ½ Stick Butter
- ½ Cup Flour
- 3 Cups Vegetable Stock
- 2 LBS Chicken, Cooked and Cubed
- 1¾ LBS Sausage, Cooked and Cubed
- 1 Head Celery, Chopped
- 2 Green Bell Peppers, Chopped
- 1 Yellow Onion, Chopped
- 2 TBSP Minced Garlic
- Black Pepper to Taste
- Kosher Salt to Taste
- ¼ TSP Cayenne Pepper
- In Skillet, add butter & oil cook over medium high heat
- Once melted, add flour, stir constantly for 3 -4 minutes
- Lower heat to medium low; Continue to cook and stir for 15 more minutes
- In crock pot add vegetable stock, vegetables, sausage, and chicken
- Mix to combine
- Add spices and mix
- Pull ingredients to one side and pour roux into stock
- Mix everything to combine
- Cook on low for 5 - 6 hours
- Serve as is or over bed of rice (optional)
