This easy Greek chicken salad recipe includes grilled marinated chicken breasts, olives, cucumbers, tomatoes and some mixed greens lettuce.
The feta cheese is optional and can be left off if you want a totally healthy salad recipe.

Greek Chicken Salad Recipe

Serves: 5-6
Ingredients
- 2¼ lbs boneless, skinless chicken breasts (Use my Greek Chicken Marinade recipe to marinade chicken breasts for 4-24 hours)
Salad:
- Cucumbers
- Calmata Olives
- Green Olives
- Lettuce Mix
- Grape Tomatoes
- Feta Cheese (optional)
Dressing:
- 6 TBSP EVVO
- 2 TBSP Balsamic Vinegar
- 1 TSP Sea Salt
- 1 TSP Black Pepper
Instructions
- Cut Cucumbers into slices or quartered slices
- Put all salad ingredients on serving platter for family style or large bowl and toss if using a bowl
- Turn stove top to medium heat
- Using a grill pan or skillet, add 3 -4 TBSP Chicken Stock, Butter, or Olive Oil to pan to keep chicken from sticking
- Add Chicken
- Cook 6 - 8 Minutes per side
- Rest for 2 -3 Minutes
- Cut into strips
- Serve chicken on top of salad
